Not a cheese buffet. Not a classic wine tasting. On this evening, the only ordinary thing is the extraordinary. Together with legendary affineur Rolf Beeler, we turn outstanding cheese into creative dishes – while two excellent wines go head to head with every course. Joining us as our expert voice on the wine selection is special guest Master of Wine Ivan Barbic. Each cheese tells the same story in two ways: as the original, raw cheese and as a refined creation from the kitchen of Executive Chef Tobias Baruffol. The wine list stays secret until the evening itself, revealed course by course.

The Aargau-based affineur has shaped Swiss cheese culture over decades and brought numerous now-legendary cheeses to prominence. His exceptional feel for origin, maturing and quality has made him a sought-after partner for producers, top chefs and sommeliers.

Ivan Barbic MW
"Master of Wine" is the most important and most prestigious wine qualification there is. Anyone entitled to call themselves a Master of Wine (officially abbreviated to MW) has reached the summit of wine expertise. Worldwide there are barely four hundred people who may claim the title. For comparison: there are around 900 Nobel laureates in total. So anyone who belongs to this select circle has earned it.

Much like a wine sommelier, a meat sommelier has extensive knowledge of different types of meat, methods of preparation and suitable accompaniments. Training as a meat sommelier covers both the theory and the practice of meat expertise, focusing among other things on the various cuts, their origin, maturing processes and the importance of animal husbandry and feeding.
